Making the Best Cupcakes in Lieu of Cookies
Ok so right back to it. I decided against making the sugar cookies because I was seriously running out of time yesterday. AND I had just scored a sweet recipe from Elizabeth Ann Designs Living (EADL) contributor, Amy I. {By the by, EADL is like my new favorite blog. Please enjoy.
That sweet new recipe? Why Ice Cream Cupcakes of course!

I know they don’t look like what you’re thinking…but they are so tasty, I know you’re running right out and make them!
To make the cupcakes you’ll need:
- 1 cake mix {any flavor and or brand you like} I used FunFetti! My fav!
- 1 pint ice cream {again any flavor and or brand you like} I used Turkey Hill Vanilla Bean
- 3 large eggs
- 1 cup water
To create:
- Mix all ingredients in your brand new KitchenAid mixer for 4 whole minutes.

In the meantime, grease the heck out of the reusable silicone baking cups.

Bake for 17-20 minutes (until tester is clean and tops are golden brown on yellow cake mixes. And allow to cool.

Then, bag them similarly to the chocolate chip goodness,

Make a nice sign and put it all together in your sweet $5 basket {excited about the basket much?}
