While the Cat is Away Part II
MB, just stay away, K?
Part II is finally here in our IV part series. Part of my MB-less time was spent in the kitchen, making very tasty {in my opinion} treats for my coconspiritors.
To say thank you for taking time out of their busy lives to help me gift and MB and celebrate my beautiful, I made Kimberly, Anna and Mrs. Best Man the Pioneer Woman’s yogurt blueberry pound cake {which I fell in love with here}. I think everyone enjoyed them some!
To Make to Enjoy and Share With Others
1 ½ cups all-purpose flour
½ teaspoon salt
2 teaspoons baking powder
2 6-ounce cartons yogurt, any flavor
1 ¼ cups sugar
3 eggs, lightly beaten
1 teaspoon vanilla
1/4 cup canola oil
1 cup blueberries

As we can see, I used the light blueberry yogurt from Giant — I also had to double the recipe to double the joy. Also I excitedly had the butter out which you {gasp!} do not need!!
Preheat oven to 350 degrees. Grease and flour a loaf pan.
Sift together the flour, baking powder, and salt. Set aside.
In a separate bowl, mix together yogurt, sugar, eggs, vanilla, and oil until just combined.

Pour over dry ingredients and mix until just combined.

Gently stir in 1 cup blueberries. Do not overbeat.

I went sans mixer for this one to ensure that I didn’t bust up my little blue friends too much.
Pour into a loaf pan and bake for 60-70 minutes, or until a tester comes out clean.

In retrospectI should have baked them for about 80 mintues as the bottoms were more moist than I would have liked.

Remove from oven and allow to cool. Then package adorablely with Crunchy Flavors Banana Strawberry Muffins.
